Costa Rica- Las Lajas Micro Mill Black Diamond
Get ready for something totally different, this coffee is probably unlike anything you've had. Meticulously processed, extremely small lot coffee from the Las Lajas Micro mill, pioneers of Natural and Honey processing methods. Our roaster recently had the opportunity to visit the mill in person and sample some phenomenal coffee. After that, it was an easy decision to bring this in as our newest Single Origin.
The tasting notes on this one have been so delicious but very unlike the coffee you're used to- juicy, tons of pronounced red fruit flavors like cranberry and raspberry, candied orange, cinnamon and clove, and a winey acidity are just a few. Get a bag and start your own taste discovery! Limited quantity, get it while you can- not one to miss.
Black Diamond Natural Process
What makes this coffee different from all the rest is the intentional curing process. It is still a Natural process, but the drying period takes between 15 to 22 days. During the first week the cherries are placed in a thick layer, in order to ferment aerobically. After this first week the coffee is spread in a thin layer until the drying process is finished. With this process, they don’t want to harm the beans with high temperatures- rather allow the sugars of the mucilage to cold crystalize. They look to obtain a sweeter, more clear, and brighter coffee with the Diamond process.
